I use this as a base and change the flavorings to suite my taste. Be it cinnamon, ginger, nutmeg, spice , vanilla flavoring or any number of other flavors available. I also add fruits, nuts or chillies to spice things up. Your limitations are only limited per your imagination.
3 cups flour 1-2 Tablespoons Baking Powder
1 cup Sugar 1 cup hot water
1 cup Oil 3 eggs
1 cup Syrup Any flavoring you desire
Sift the flour and baking powder together, add all other ingredients, except the eggs. Mix well, then add the eggs (this is to keep the hot water from cooking the eggs).
Prepare 2 loaf pans by buttering and flouring the sides and bottom of each, to prevent the cakes/bread from sticking to them and are easily removed.
Divide the mixture evenly between the two pans, bake for 1 hr in 180°C/350°F, preheated oven. Once baked, remove from pans and cool on baking rack.
These can be eaten immediately or made ahead and placed in the freezer wrapped in plastic and foil and sealed in a zip lock bag. Thaw unwrapped on a rack when ready to use.
This is such a versatile recipe, that one can change any of the ingredients, even illiminate the sugar and add sun-dried tomatoes, prunes, raisins, shredded carrots, or anything your heart desires.
This makes a great treat anytime you need a small snack or a special dessert to take to a get together. For breakfast, I like to spread cream cheese on mine and have with my coffee.
